One of the key skills to learn in the kitchen for the blind is how to use a knife. While using a knife without vision may seem dangerous, the right technique with allow the user to have no problem at all. When you keep your fingers close but, clear of the edge, there will be zero rist of you cutting yourself.
Begin by gathering your cutting board, food, and knife. The size of the knife depends on what you’re working with. If it is large like steak, you will want a larger knife. If it is smaller like garlic or carrots, I advise using a smaller blade.
Lay your food on the cutting board and make sure that it is laying left to right. An example of this would be a carrot. You should lay it to where the tips of the carrot are pointing left and right. This will amke it so that cutting your food will not be at an akward angle.
To begin cutting, make a fist with your hand that doesn’t have the knife in it. With this fist, you will lay your nails on top of the food. From here you will set the side of the blade against your second knuchles to keep it in line. To begin cutting, push the blade forward and down at the same time. This will cause the knife not to make a loud chop but, do a clean cut with the forward motion. The best thing you can do is keep the side of the blade against your second knuckles while you slide it forward and down. Keep in mind not to let the edge of the blade touch your fingers at all. The only thing you should feel is the smooth side of the blade you’re working with.
After you have made your cut, put the piece that came off aside so it does not get in your way. You will then repeat the steps above after moving a little bit farther along what you are cutting.
With time and practice, using the knife will become much more easy. The most important thing to note when cutting is always slide the blade and do not push it down. Further, you can touch the blade often but do not ever touch the actual edge.
